Fino Sherry is a kind of dry, light-coloured fortified wine from Spain. It is produced from the Palomino grape and matured under a layer of yeast called flor, which prevents it from oxidizing and gives it a nutty, salty taste. We use Fino Sherry Butts because when they are used to age whisky, they can transfer some of these features to the spirit, as well as pale colour and freshness. This whisky was aged in cask #396, and it has imparted a rich and complex flavour profile to the spirit. This whisky is bottled at 61.1%ABV. Distilled, matured, and bottled at cask strength from a single cask in Annandale, without chill filtration or added colouring.
