Established in 2011 but with an approach that predates them by about 200 years, Pinhook are a bourbon distillery after our own hearts. Rather than chasing consistency and blending their bourbon to a set flavour profile, each whiskey they produce is unique and released as a single annual vintage, crafted from that year’s mature casks. Pinhook celebrates the individuality of every single year of releases, much as we do with every single cask bottling. These barrels previously matured Pinhook Straight Bourbon for a period of three years, and will create a whisky with notes of nutmeg, freshly roasted coffee, butterscotch, toasted coconut, and almond. This cask influence will be a wonderful complement to the orchard fruit-forward character of our new-make spirit. Our shared commitment to the singularity of spirit production will create a truly unique whisky, and a single cask bottling with provenance that is truly second to none.
