Ascension Cider is a family business based at Ringden Farm in East Sussex, founded by Matt Billing in 2017. Matt uses 100% freshly pressed eating and cooking apples rejected by supermarkets for cosmetic reasons, wild-fermenting with a house yeast strain before blending with fruit and botanicals to create a core range alongside seasonal editions. All ciders are gluten-free and vegan-friendly.
