This single variety cider was spontaneously fermented before being transferred to a 300L Bordeaux barrel made from American oak where we introduced our house culture. It was aged for 9 months before packaging with sugar and champagne yeast. Chisel Jersey brings tropical fruit and acidity with big, bold tannic structure. Bold, vibrant and juicy with refreshing crisp dryness, it finishes with pineapple and straw funk.
