
Our whisky starts with Cheshire barley, fermented with wild yeast and pure spring water from our own source. It is aged in oak casks beneath the Cat & Fiddle for three years, before being carefully blended with other select whiskies at our distillery. The blend is then given a final, indulgent layer of flavour by resting in a 50-year-old Oloroso cask within our cellars.
