
A smooth, complex, dryer style junmai ginjo sake; brewed using the ancient Bodaimoto method. Notes of strawberry, basil & cream - watermelon & fresh herbs. KIKU meaning “HEAR” is a limited edition, ultra-premium, experimental British sake within our REBIRTH series. Using the very latest henpei flat polishing technology, alongside the mizu-moto method derived from a 1,000-year-old Bodaimoto recipe (natural lactic acid is developed using koji and water prior to fermentation) this sake aims to explore the structural depth, acidity, and microbial complexity achievable through premodern techniques.There are two variations CLEAR / FIZZ - and can be purchased as a pair (whilst stocks last):KIKU CLEAR is a fine physically filtered elegant expression, with zero use ofcharcoal or finings and no carbonation. This is a classical style premium sake. KIKU FIZZ is a modern sparkling expression, which has undergone secondary fermentation in bottle - by combining the moromi (mash) of a second Bodaimoto sake to the base liquid in bottle as a traditional method tirage. With no disgorgement this sake is intended to be poured cloudy.We recommend to enjoy each style chilled - slowly invert the FIZZ bottle a couple of times to gently agitate and mix the sediment ahead of opening carefully.
