bottle conditioned 2021 was our first time working with Balls Bittersweet, an unusual Herefordshire variety descended from Medaille d'Or and our old friend Foxwhelp. Coming from the rolling hills of West Herefordshire, they produce a beautiful, naturally balanced cider, with great depth and good acids. Wild fermented, this spent some time in second- and third-use ex-cognac barrels before bottle conditioning for a gentle, creamy bit of sparkle in the glass. Reminiscent of Yarlington Mill in both
