The Ethical Spirits & Co’s very first gin. A sake lees-based gin distilled with wasted cacao husk, derived from the chocolate-making process. The sake lees are provided by Hiraizumi Honpo brewery (Akita prefecture). TYPE: Gin COLOUR: Clear water white OUR TASTING NOTES: Delicate nose of orangette and orange cake. The ginjo aroma that derives from the sake lees base imparts the gin a pronounced nose of pineapple and a vibrant sweetness on the palate. The cacao husk adds a woody, roasty sweetness
