A nigori (“cloudy sake”, which means some of the fine particles of yeast and steamed rice remain as sediment) in which the main aroma is that of cooked rice, sake lees and fresh cheese. This sake has a creamy texture and an enveloping flavour of rice-driven sweetness and umami, with a slightly tart aftertaste that cleanses the palate.
