A junmai daiginjo which has been pasteurised only once (namazume), made with Shiga Watarifunerokugo rice, an older variety that has resurfaced in recent years. The sake underwent a rapid heating followed by a rapid cooling process, which imparted a freshness typical of unpasteurised sake to the aroma and a pleasant rice flavour, making it a good pair for a meal.
