Shizenshu Nigori

A pure nigori (“cloudy sake”) from the Shizenshu (“natural sake”) brand, made with organic rice, additive-free yeast, and using the traditional kimotozukuri (or kimoto) method for the fermentation starter. This sake was brewed like the old days, mashing the fermenting mass (moromi) with a stone mortar. On the palate, the large quantity of sediments give it an intense koji aroma, a rich taste, and a smooth texture that feels like freshly fallen snow. In the aftertaste, there is a hint of the acid
