
Amongst the array of maturing casks at The English Distillery, there are surprisingly few small casks, that is, anything under 200 litres. In the very early days, we trialled a few to see how they affected maturation. The first time we used them, the effects were pretty dramatic, but we thought they simply imparted too much oak. However, once emptied and refilled, the casks lost their initial vigour and have matured the whisky beautifully the second time around. This Quarter cask holds 100 litre
