A very fine two - year old Pomona A combination of cider apple eau de vie with freshly pressed apple juice, 15 year old Stockinger casks, and time. The result is about as complete a taste of orchard culture as you could ask for. Made with hand picked fruit from Wilding's biodiverse traditional orchards. The cider for distilling is a ratio of 80% bittersweets and 20% sharps, the juice to age with the spirit is a balanced blend of 1/3 sharps with high sugar and 2/3 bittersweets with plenty of tann
