
Description Our first Chardonnay Pet Nat. Bottled mid-fermentation to capture its natural fizz. Winemaking Whole bunches, gently pressed. The juice was left briefly in the fruit tray before being transferred to an open topped tank to encourage a gentle oxidative character. Fermented in stainless steel with indigenous yeast and bottled before fermentation completed to capture natural sparkle. Roughly hand disgorged. No SO₂ additions. Tasting Notes Nose: Green apple, salty pie crust. Palate: Lemon
