GRAPE VARIETIES: Cabernet Franc Produced using the traditional method and Lees aged for 18 months. TASTING NOTES A first for White Castle Vineyard, Wales, and the UK – our 2023 vintage Cabernet Franc Sparkling Rosé has exceeded all expectations. This complex Rosé reveals a vivid rouge hue Style: Elegant Brut, traditionally made sparkling wine Nose: inviting Strawberry Aromas Palette: On the palate, it offers a clean, crisp profile with vibrant flavours of wild forest berries, culminating in a luxurious creamy mouthfeel WINE MAKING The grapes were hand harvested in 2023 and the juice fermented in stainless steel vats. In 2024 we inoculated the wine with a small amount of yeast and sugar to induce the secondary fermentation and bottled. The best Champagnes and Sparkling wines are made by méthod champenoise which requires a secondary fermentation in the bottle. The wine continued to sit on the lees for a further 18 months before being disgorged. FOOD NOTES Sparkling wine tends to go very well with appetizers. It also goes well with fish and very light meals, and of course as an after-dinner celebration or toast. Serve chilled.
