Dojima Sake Brewery is the UK's first Japanese-owned sake brewery, established by the Hashimoto family at the historic Fordham Abbey estate in Cambridgeshire after a £9 million investment. The Hashimoto family has been brewing sake at Kotobuki Shuzo in Osaka since 1822; at Fordham Abbey they craft premium junmai sake and nama varieties using carefully selected Japanese sake rice and pure English water filtered through Ice Age strata, with a brewery, visitor centre and Japanese cafe on-site.
